Established in 1992, Col’Cacchio is a name that has become synonymous with traditionally inspired Italian food, including crisp thin-based pizzas and an impressive variety of freshly prepared salads and pastas. The directors and shareholders of the company are Kinga Baranowska, Michael Terespolsky and Greg Mommsen. Michael and Kinga opened the first Col’Cacchio in Foreshore, Cape Town in November 1992. Based in Johannesburg, Greg is also the owner of Col’Cacchio’s in the Nicolway Bryanston Centre.
The concept was born out of their desire to serve Italian-inspired food with a special focus on gourmet thin-based pizzas made from the freshest and finest ingredients. Col’Cacchio franchised in 2003 and today boasts 36 restaurants nationwide. All three shareholders are very involved in the day-to-day running of the business – keeping the entrepreneurial passion alive whilst providing support to the group with their solid business know-how.
Col’Cacchio prides themselves in sourcing top quality ingredients and offering nutritious food including gluten and wheat-free pizza base and pasta options. With a selection of over 50 different pizzas and 20 salad and pasta options, there’s a lot to be said for their menu with its wide selection and delicious combinations.
Col’Cacchio is essentially the pizzeria unico for discerning, loyal consumers who enjoy consistent, healthy, slow food in a casually sophisticated environment.
Col’Cacchio is a family friendly environment which allows everyone to enjoy being part of the pizzeria experience. Kids are given dough to play with and are able draw up pizza designs on brown paper ‘bases’ while they wait for their food.
Training and support is provided by the national operations team. Before an outlet is allowed to open its doors for trading, the franchisee and all full time staff complete a comprehensive training course conducted over two months. An additional month of training will be conducted on-site once the store is operational. Training is also provided for front-of-house and back-of-house staff.
Field service consultants visit stores on a regular basis, conducting store reports and audits to assess the franchisees’ needs and help them work through any challenges.
